| Honig Winery 2000 Cabernet Sauvignon Napa Valley Tasting Notes: Incredibly dark and full of flavor. Aromas of green olive, black fruit, coffee and tarragon. Thick, assertive flavors of blackberry, ripe currants and creamy vanilla. Subtle oak nuances from the 18 months the wine spent in American Oak barrels lead into along, layered finish. From a superb vineyard in the heart of Rutherford. Food Pairing: The Honig Cabernet Sauvignon pairs beautifully with lamb, duck, beef and wild game. It also makes a perfect complement to pasta with red sauce, pizza and a variety of cheeses. About the Winery: The Honig Winery was conceived by advertising genius, Louis Honig in 1964. He purchased a 68 acre ranch in Rutherford, hoping one day to retire there and make wine from the vineyard. In the early days, the grapes he grew were sold to neighboring wineries and used to produce award-winning wines. In the early 80’s the winery operation was taken over by family & partners, Bill and Nancy Honig and Sue Honig Weinstein and Dan Weinstein were they began the production of award winning Sauvignon Blancs. Fruit quality is paramount to wine quality. Everything that has happened in the vineyard during the growing season, even many growing seasons before, has an impact on the outcome of the wine. The vineyard is where winemaking begins. Once the grapes are in the winery, it is the winemaker's job to best express the characteristics of each vineyard and variety using different winemaking techniques. Even though winemakers have a command of the process, there are always surprises along the way and many unexpected outcomes. This is what keeps them fascinated with this ancient art, year in and year out. |
